TYPICAL RECIPE OF CARRARA (ITALY)

TAGLIERINI NEI FAGIOLI ( NOODLES IN RED BEANS SOUP )

INGREDIENTS ( 4 persons )

300 gr. Flour

1 Kg fresh red beans

300 gr. savoy cabbage

4 potatoes

1 onion

1 zucchino (courgette)

1 rib of celery

Parsley

Basil

1 red tomato

Marjoram

1Carrot

Gr 100 lard

Oil and salt

PREPARATION

Boil the beans and the vegetables in a big pot with enough water to cover them all, about 2 litres. Add half tea spoon of salt, keep the onion, the celery , the carrot, the parsley and the basil apart. While the vegetables are cooking, chop the carrot, the celery, the onion, the basil, the parsley and a slice of lard all together and set everything to fry with a few spoons of olive oil in a pan until a bit golden. Then add a chopped tomato or two spoons of tomatoes sauce and pour a few spoons of water into the pan in order not to dry it all. Add a sprinkle of grounded marjoram and a pinch of salt. When the beans and the vegetables are cooked after about one hour boiling you have to pureè most of the beans and some of the vegetables untill you get a dense soup with still chopped vegetables .Add the aromatic flavors already salted, into the pot with the soup, stir everything together and you get a flavoring soup. To prepare the noodles you have to mix only flour and water and use your hands to knead them untill you get a uniform dough. Place the dough on a lightly floured surface and roll it out with a rolling pin until it is 2mm thick and then roll the thin dough up . You have to cut it into a half cm strips. When ready, cook the noodles in the soup boiling for about 5 minutes . Consider one handfull of noodles per person. Sprinkle each soup dish with some grated parmisan cheese.
